CSV upload UI + expanded bank support

Public release prep — demo mode & merchant engine
The big clean-up before opening the doors. Comma was originally built as a personal tool — this release makes it ready for anyone to use safely, with realistic demo data, a significantly expanded auto-categorisation engine, and all personal references removed from the codebase.
